Sugar-free jello is fine, from a calorie/carb point of view.
That being said, I discourage my patients from eating artificially sweetened foods. It is more chemicals for your liver to detox, and right now you want your liver to focus on detoxing all the stuff coming out of your fat cells as you lose weight!
Why put more “ick” in when you’re trying to get it all out?

Pork or Chicken Recipe
I made the following recipe minus the oil and salt. It was excellent! I just put all the ingredients minus the meat in a crock pot, stirred it, and then added the meat. Cook for 7-8 hours. I’m thinking you could make this with chicken breast also.
Mexican Pulled Pork
By The Canadian Living Test Kitchen
This recipe makes 10 servings
Ingredients
3-1/2 lb (1.6 kg) shoulder butt pork roast
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) pepper
2 tbsp (25 mL) vegetable oil
4 cloves garlic, minced
2 onions, chopped
1 jalapeño pepper, minced (or 1/2 tsp/2 mL hot pepper sauce)
2 tbsp (25 mL) chili powder
1 tsp (5 mL) ground cumin
1/3 cup (75 mL) tomato paste
1 can (28 oz/796 mL) tomatoes

The best way to fix zucchini (from a gal that has a hard time eating her veggies) 🙂
Grate zucchini (use the largest holes on your grater)
Put zucchini in a non-stick fry pan on high heat
Add basil leaves (Trader Joe’s has frozen basil cubes, use 1)
Stir occasionally. cook until tender–about 5 minutes
Yum!
